There is a list of public servers on the websites page.

Consider using nethack.alt.org and slashem.crash-override.net; both allow you to telnet in and play games or watch games in progress. They also have sortloot and menucolors.

There are several ways to manage your public NetHack server, but the most common is to use dgamelaunch, which manages the user accounts and runs the NetHack processes in a chroot jail when user telnets in to the server.
