You don't appear to be able to hurt a statue gargoyle without a +1 or better weapon. My large dog couldn't hurt it either, so I used it to farm up some weapon skills, and eventually killed it with Snickersnee. Though Snickersnee wasn't +1, it did the trick, but a multitude of other weapons didn't hurt it. Stone to Flesh will turn it into a plain old Gargoyle, which can then be injured by normal means.
It gets 3 or so attacks per round, and so can be quite a pain to farm on unless you've got pretty good AC.
In vulture's claw, Statue Gargoyle looks like a normal Gnome, so keep an eye on the combat log!
