Flesh is a material. It refers to the real-life equivalent of "meat" - presumably muscle, fat, entrails and skin of an animal.
Most corpses are made of flesh, as well as the following items:
If you polymorph too many flesh items on a single square, you may create a flesh golem.
Conduct
Eating any flesh will break the foodless, vegan and vegetarian conducts.
