The killer bees, a, come in large numbers, and can easily kill you, one sting at a time, before you can kill the whole bunch of them. They also tend to be faster than you, so they can get more than one sting in each round. Sometimes their sting is poisoned, which can kill you if you are not resistant.
Unless you have an area weapon or awesome armor class, discretion is usually the better part of valor here. Have an escape route handy if you find yourself suddenly surrounded by these little nasties.
Another tactic would be to fight them in a single square tunnel, so that only one of them could sting you each round.
Eating enough of them confers poison resistance intrinsics. As you continue to eat more killer bee corpses, you will get the message 'You feel healthy' indicating that you now possess poison resistance. However, their corpses are also poisonous, which can result in the loss of some strength points when eaten.
A killer bee might be seen to fly out of your pack.
