Things that could be removed from NetHack and (almost) no one would notice

Gameplay

  • Score, especially wrt tournaments
  • The "sucker" penalty for not wearing armor over your shirt.
  • Extinction counters.
  • Secret doors.
    • (proof of concept: UnNetHack. Players do notice frustrating secret doors, but when secret doors don't exist, players simply play normally without comment on the matter.)
  • Tin openers.
  • The spells of detect food, cure blindness, and invisibility. Also the scroll of food detection.
  • **floor spawned** items that spawn on the ground with a chance of 0.5% or less, such as CoMR and WoW
    • (CoMR would still be wishable, found infrequently in the inventories of aligned priests, found on wizard bones, and in shops, etc., and the WoW would still be in the castle and mayyyybe allowed in shops.)
  • Giantslayer.

Redundant variations

  • Morning stars, ranseurs, guisarmes, etc - any weapon that's effectively identical to other weapons.
    • (proof of concept: Fourk, and other variants)
  • gray elf, green elf, brown elf, orange elf... consolidate 'em all!
  • Water trolls.
  • Any 3 (but not all 4) from the set of panther, lynx, tiger, jaguar.
  • 2/3 centaurs, but not all 3.
  • Either hill or stone giants, but not both.
  • Either horned or barbed devils, but not both.
  • Titanotheres, baluchitheria.
  • Remove three of apples, bananas, melons, oranges
  • candy bars and fortune cookies both serve as traps for unwary vegans; fortune cookies are mildly interesting.
  • only a few price tiers / variations of gems are needed.
  • chests and boxes.
  • Samurai and Knight. They're both heavily armored lawful warriors who carry a sword, they both observe a not-too-difficult code of conduct, they both can move around quickly at level 1 (intrinsic speed, or horse/jumping).
    • In other words, they could just be flavor kits chosen from a shared role - a samurai kit causes items to be renamed to japanese equivalents, the chevalier kit renders those same items into french words, and kits could be thrown in for any number of other knightlike traditions - kshatriya, mujahideen, etc. This is not unlike the differing racial gear kits given to rangers.
    • The funny thing is, many major gameplay difference between the current honorable-warrior roles is actually kinda "behind the scenes": HP, starting with a #dippable longsword, and quest difficulty.

Monsters that never have any impact during normal play

  • zruties
  • Wargs
  • Possibly lemures (veteran players would probably notice them missing on Juiblex I guess)
  • Steam vortices.
  • Violet fungus.
  • Straw golems.
  • Sandestins.
  • Possibly jellyfish, piranhas.
